  PROOF OF ORIGIN  
  At the end of the 19th century, "stupendous and luxuriant chestnuts" prospered throughout the Valle del Tasso (on the eastern side of the Monte Baldo) and spread to the municipalities of Malcesine, Brenzone and Castion di Costermano, but especially around San Zeno di Montagna. The proof of the origin of the product is determined by the registration of the chestnut woods in the register that contains all the cadastral details of the cultivated land and, for each parcel, the proprietor company, the leasing company, the locality, number of plants, the maximum production of marrons, the age of the trees. The register is continuously updated by the Control Body: for maximum safeguard, the registration applications must be submitted no later than December 31 of the year previous to that when the P.D.O. product is intended to be marketed.
